In July 2025, our family took a trip to Colorado. If you know Colorado, you know there is way too much to do! There is an overwhelming amount of choices-from outdoor adventures, to big city finds!
Many Kansans choose Colorado for their vacations, being neighbors and all! When we go to Colorado, we have three main “bucket list” items: outdoor adventures, brewery beers and good food, and a unique city attraction.
Outdoor Adventures
Colorado is the mecca of outdoor fun! Water, mountains, hikes, sports…they have it all! But remember, we have a 6 year old, so we have to choose adventures that she can handle. Here are a few things we did:
Windsor Park-we were staying in the city of Windsor, CO, and our friends took us to Windsor Park and Lake. A beautiful and unique park right next to their downtown. New and fun park equipment, including fitness equipment, a sandy beach on Windsor Lake, a 2.5 mile trail, and water equipment rentals.
Devil’s Backbone Trail-We HAD to take a hike, and our local friends chose Devil’s Backbone, a 1.5 mile trail up to a rocky outlook. I loved they scenery, the red dirt crunching under our feet, and the different vegetation and rock formations that Kansas doesn’t have. Dayne did her best, but she got a couple piggy back rides on the way down!
Poudre River float trip-Eastman Park in Windsor hosts a tube rental to float down Poudre River, a lazy shallow river that flows about a mile around the park. Our whole family loved this experience, as it was a relaxing, easy float. Dayne even loved it and grabbed a river rock to remember her experience!
Golfing-B and Wake made a lifetime memory while golfing on one of the many public golf courses in Windsor! They saw deer, which Wake was very excited about! And B said he will always remember this special memory of him and his son!
Brewery and Food
When on vacation, we must try all the new food and drinks! We try very hard to not go to a chain. Here are some of our most memorable places we stopped at:
Mash Lab Brewery, Windsor-A local brewery with hip decor, party rooms, outdoor patio and games. We even got a brewery tour with the head brewmaster!
Steuben’s-a downtown Denver diner made to look like you are walking into the 1970’s! The food was dynamite (homemade biscuits!), the bloody mary on point, staff was helpful and friendly, and the atmosphere was special!
New Belgium Brewery, Fort Collins-We happened to come on a live music night on their courtyard between their brewery and their corporate offices. They had families playing ball, food trucks, beer carts, and patio furniture strung about. It was just the quintessential outdoor Colorado brewery experience, and such a beautiful night to share with friends!
Mainline City Attractions
If it were just B and I, we would be content scooting around the city, but with the kids, we like to do at least one big attraction!
Denver Aquarium-We gave the kids a choice on attractions and they chose the aquarium. It was a fun way to spend a hot afternoon! They even had a tiger!?!?!
